Shanshan Chen

Shanshan Chen is an Associate Professor and core faculty member in the Department of Nutrition and Exercise Science at Bastyr University's School of Natural Health Arts and Sciences in San Diego. She also serves as Department Chair of the Online Learning Division (BOLD) since 2016.

• Ph.D. in Public Health (Nutrition) from University of Massachusetts Amherst
• MS in Nutrition and MS in Maternal and Child Health from Anhui Medical University
• BS in Nursing from Anhui Medical University

Her research focuses on nutrition and health promotion, particularly examining added sugar intake and chronic disease risks among the US population. She specializes in developing culturally sensitive nutrition education materials and community nutrition interventions for underserved populations.

Dr. Chen has extensive experience in academic leadership and curriculum development, having integrated international nutrition content into university curricula and directed nutrition programs across multiple institutions.
