Dr Sarah Bath is a Senior Lecturer in Public Health Nutrition at the University of Surrey's School of Biosciences, within the Department of Nutrition, Food and Exercise Sciences. She holds a PhD and is a Registered Dietitian (HCPC) and a Fellow of the Higher Education Academy (FHEA). Her primary research focuses on iodine deficiency, particularly its impact on neurodevelopment in children, and the implications of dietary trends, such as plant-based alternatives, on iodine intake. She has led projects like the EUthyroid 2 initiative and held an MRC Population Health Scientist Fellowship (2013-2016).

Her research interests include iodine status in UK pregnant women, dietary predictors of iodine deficiency, and the role of iodine in early life nutrition. Dr. Bath teaches on the MSc in Nutritional Medicine and the BSc in Nutrition and Dietetics programs. She actively supervises PhD and MSc students, focusing on topics like iodine intake modeling and plant-based diets.
Her work has highlighted risks of iodine deficiency in populations adopting plant-based diets and contributed to policy recommendations for fortification strategies. Recent studies address seasonal variations in milk iodine content and the global adaptation of iodine deficiency control measures to modern dietary changes.
