Professor Margaret Rayman is a Professor of Nutritional Medicine at the University of Surrey, leading the MSc Programme in Nutritional Medicine since 1998. She holds a doctorate in Inorganic Biochemistry from Somerville College, Oxford, and has held post-doctoral roles at the Institute of Cancer Research and Imperial College. Her research focuses on trace elements like selenium and iodine, particularly their roles in pregnancy outcomes, thyroid function, and chronic diseases like diabetes. She collaborates with over 20 international institutions and has pioneered studies on iodine deficiency in plant-based diets. She also serves as a Visiting Professor at Xi'an Jiaotong University, China.
Her teaching contributions include designing the UK's first evidence-based MSc in Nutritional Medicine for healthcare professionals. Research highlights include systemic reviews on global milk iodine levels and the impact of selenium on viral diseases (e.g., SARS-CoV-2). Her work emphasizes public health interventions, such as iodine fortification in dairy alternatives.
Recent publications explore iodine's role in pregnancy, selenium's antiviral properties, and nutritional strategies to improve vaccine efficacy. Collaborations span nutritional epidemiology, clinical trials on selenium supplementation, and global health initiatives addressing micronutrient deficiencies.
