Professor Jennifer Mahony holds a dual appointment as Professor of Molecular Food Microbiology at University College Cork's School of Microbiology and Principal Investigator at the APC Microbiome Institute, Ireland's premier microbiome research center. Her work bridges academic excellence with direct industrial applications in food safety and fermentation technology.
Her research program focuses on molecular mechanisms of phage-host interactions in lactic acid bacteria, with particular emphasis on receptor identification, defense system characterization, and genomic analysis of food-grade microbes. Current projects investigate bacterial surface polysaccharides as phage receptors, mobile genetic elements carrying phage resistance systems, and viral diversity in dairy fermentation ecosystems.
