Prof. Jennifer Mahony holds the position of Professor of Molecular Food Microbiology at the Department of Microbiology, University College Cork (UCC), Ireland. Her research focuses on phage-host interactions in lactic acid bacteria, food microbiology, and microbial adaptation mechanisms. She obtained a BSc in Food Science and Technology from Cork Institute of Technology (2003) and a PhD on bacteriophage resistance mechanisms in Lactococcus lactis (2008).
Her work integrates structural biology, glycobiology, and biochemistry to study bacterial survival strategies against phages. Current research emphasizes exploiting cell surface structures for sustainable food systems, phage-based therapies, and understanding microbial community impacts. Her team's research has been published in high-impact journals like Nature and PNAS, and funded by Science Foundation Ireland, the Bill & Melinda Gates Foundation, and industry partners.
Prof. Mahony has conducted research secondments at the University of Groningen and CNRS Marseille. Her grants include collaborations with SaccoSystem and DSM Food Specialties. She leads a multidisciplinary team addressing food safety, biotechnology applications, and microbiome interactions with human health.
