Professor Paul Ross is Director of APC Microbiome Ireland and Head of the College of Science, Engineering & Food Science at University College Cork (UCC). He leads a major research program focused on the human microbiome, bacteriocins, and probiotics, with applications in food safety, gut health, and alternatives to antibiotics. He is a Principal Investigator in the APC’s Microbes to Molecules Research Theme and has received international recognition for his work.

Paul Ross’s research centers on food and health, particularly antimicrobials, gut flora, bacteriophages, and pathogens. His work explores how food components influence human health through modulation of the microbiome. He has made significant contributions to understanding probiotics, bacteriocin applications, and infant microbiome development. His research spans fundamental microbiology to applied food biotechnology and clinical implications.
The 15 most recent publications reflect a consistent focus on microbial interactions, bacteriocin engineering, gut microbiota modulation, and functional foods. Key themes include the therapeutic potential of probiotics in inflammatory diseases, genomic analysis of lactic acid bacteria, phage therapy, and the development of bioactive dairy products. Paul Ross has supervised 89 Ph.D. and 25 M.Sc. students and secured over €160 million in research funding since 1994. His leadership roles include Director of APC Microbiome Ireland (since 2019), Deputy Head of APC (2016–2019), and Head of College of Science, Engineering & Food Science at UCC (since 2014). He previously led food biotechnology programs at Teagasc. His research team operates within one of Europe’s leading microbiome research centers.
He is affiliated with the APC Microbiome Ireland research center at UCC, a world-leading institute in microbiome research. His lab focuses on translating microbiological discoveries into innovative food and health applications, including biopreservatives, probiotics, and phage-based therapies. The APC fosters interdisciplinary collaboration across microbiology, genomics, immunology, and clinical science.
