Gerald F. Fitzgerald is a Professor of Food Microbiology and Head of the School of Microbiology at University College Cork (UCC), Ireland. He holds a PhD in Microbiology and has been Deputy Director of the Alimentary Pharmabiotic Centre since 2003 and Director of the UCC BioTransfer Unit since 2000. His research focuses on lactic acid bacteria, probiotics, and their applications in food and health. He has led industry-led research initiatives such as Food for Health Ireland (FHI) and contributed to the development of functional food ingredients from dairy products. Fitzgerald has published over 250 peer-reviewed papers and is involved in projects exploring gut microbiota roles in health, food fermentation, and biotechnology.
Education: PhD in Microbiology (UCC).
Research Interests: Molecular biology of lactic acid bacteria, bacteriophage interactions, probiotic biotechnology, biocontrol in food preservation, and food fermentation processes. His work includes genetic analysis of phage resistance systems, development of genetic tools for lactic acid bacteria, and studies on probiotic strains' health benefits.
Key Contributions: Patents on phage resistance systems, leadership in APC and FHI centers, and exploration of microbiota's roles in metabolic and neurological health. His research integrates microbiology, food science, and human health.
