Shannon Jones is a Clinical Assistant Professor in the Department of Nutrition & Integrative Physiology at the University of Utah. She oversees childhood prevention programs for the Driving Out Diabetes Initiative and serves as a Co-Investigator for the Mountain West Prevention Research Center. Executive Director, Center for Community Nutrition (2022–present) Co-Investigator & Dissemination Lead, Mountain West Prevention Research Center (2020–present) Research Focus: Her work centers on social determinants of health, food insecurity, and transportation equity among marginalized populations, particularly persons experiencing homelessness. She employs community-engaged research and Dissemination and Implementation (D&I) Science to bridge academic findings with real-world solutions. Recent Trends: Her publications analyze how shelter decentralization affects mobility patterns, disparities in food insecurity among sexual minorities, and strategies for inclusive community consultations during scoping reviews. These studies emphasize accessibility, empathy, and structural discrimination.
