Dr. Julia Low is a Senior Lecturer in the School of Science at RMIT University, specializing in sensory and consumer science with a focus on psychology and nutrition. Her research bridges fundamental sensory science (e.g., psychophysics, cross-modal perception) and applied studies enhancing eating experiences via design, technology, and psychology. She co-leads the RMIT Sensory and Consumer Science Research Team and explores how individual differences in flavor perception and eating behaviors are influenced by cognitive traits and environmental contexts. Key projects include optimizing astronaut meal experiences in space and rethinking flavor in digital environments. Education & Career: PhD in Sensory Science (implied via research background) Postdoctoral Fellowships at the Riddet Institute (2018–2020) Teaching roles at RMIT and Deakin University since 2017 Research Interests: Cross-modal perception, digital sensory environments, sensory design for aging populations, space food systems, and GenAI applications in sensory evaluation. Recent work emphasizes VR-based space food testing and multisensory XR for astronaut wellbeing. Awards & Recognition: 2025 Australian Space Awards Finalist (Rising Star) 2024 RMIT Vice Chancellor Leadership Award 2023 RMIT Teaching Award 2017 AIFST Malcolm Bird Award Teaching & Supervision: Coordinates courses like Nutritional Physiology and Advanced Food Research Projects. Open to supervising Masters/PhD students in sensory science, food technology, and applied psychology. Labs & Collaborations: Leads the RMIT Sensory and Consumer Science Research Team, collaborating with aerospace organizations (e.g., AIAA) and tech firms on VR/XR applications. Active in industry partnerships for space food innovation and digital sensory tools.
