Stan Kubow is an Associate Professor at the School of Human Nutrition, McGill University. He holds editorial board memberships for journals like Journal of Lipids, Nutrition and Medicine, and Journal of Nutrition and Metabolism. His research focuses on nutritional strategies to mitigate environmental toxin and disease effects, with particular emphasis on oxidative stress, inflammation, and gut microbiota interactions. He has a PhD from the University of Guelph (1984) and joined McGill in 1987. His work spans clinical, population, and animal model studies, collaborating with institutions like the Montreal Children’s Hospital and Health Canada, as well as international partners. Key themes include polyphenol bioactivity, pollutant toxicity, and prebiotic/probiotic applications.
Education: BSc (McGill, 1978), MSc (University of Toronto, 1980), PhD (University of Guelph, 1984). Research highlights include studies on methylmercury exposure in Indigenous populations, gut microbial metabolism of polyphenols, and protective effects of dietary interventions in chronic diseases. His lab investigates food-derived bioactives, such as whey proteins and potato extracts, for health benefits.
Grants and collaborations involve NSERC and CIHR panels, with industry partnerships. Teaching includes courses like NUTR 337 (Nutrition Through Life) and NUTR 606 (Human Nutrition Research Methods).
