Rochelle Embling is a researcher within the Swansea Nutrition Appetite & Cognition (SNAC) Research Group at the School of Psychology, Faculty of Medicine, Health and Life Science, Swansea University. She completed her BSc in Psychology at Swansea before pursuing a PhD under the ESRC Wales Doctoral Training Partnership, focusing on how meal factors influence food intake and weight management. Her current postdoctoral research explores consumer engagement with novel food ingredients like seaweed and algae for sustainable diets.
Her research interests span eating behavior, sustainable nutrition, and public health. She emphasizes real-world impact through collaborative work addressing climate-related dietary challenges. Key influences include her supervisors and the supportive postgraduate community at Swansea. Future goals include expanding research skills and interdisciplinary collaboration.
