Professor Michelle Lee is a Deputy Executive Dean and Professor of Psychology at Swansea University, affiliated with the School of Psychology within the Faculty of Medicine, Health and Life Science. Her research focuses on human appetite regulation, inhibitory control of eating, infant feeding practices (especially baby-led weaning), and obesity-related behavioral mechanisms. She joined the Department of Psychology in 2003 with expertise in behavioral neuroscience and psychopharmacology.
Her work bridges cognitive psychology and public health, investigating how impulsivity and self-control influence eating behaviors. Key topics include early childhood feeding strategies to promote satiety responsiveness and the impact of dietary variety on portion consumption. She collaborates extensively on interdisciplinary projects, including studies on consumer perceptions of sustainable foods like seaweed-based proteins.
Recent articles emphasize consumer decision-making around meal-replacement products and strategies to manage tempting foods. Her findings contribute to developing cognitive strategies to reduce overeating and inform public health policies. She actively supervises postgraduate research, such as studies on food-variety effects and portion size measurement.
Michelle Lee maintains an active research portfolio with over 50 peer-reviewed publications, including landmark studies on weaning approaches, satiety regulation, and the neuropharmacology of appetite. She is affiliated with Swansea University’s Institute of Life Science and engages in knowledge transfer through mobile health app development and policy-related research.
