Peter Paulsen

Peter Paulsen is an Assistant Professor at the University of Veterinary Medicine Vienna, affiliated with the Department of Meat Hygiene. His research focuses on microbiology and hygiene in meat production, biogenic amines, game meat safety, and consumer health protection. He holds roles in professional organizations such as Treasurer of the Austrian Society for Meat Science and Technology and Board Member of the International Research Forum on Game Meat Hygiene.

He has been a university assistant since 1994 and became an assistant professor in 2003. His teaching includes courses in basic and advanced veterinary studies.
