Dr. Dragan Vasilev is a full professor at the Department of Hygiene and Technology of Animal Origin Food within the Faculty of Veterinary Medicine at the University of Belgrade, Serbia. His academic career has been dedicated to advancing knowledge in food safety, meat technology, and the quality assessment of animal origin food products. As a faculty member, he teaches multiple courses related to food hygiene, meat technology, and food analysis including Methods of Food Testing, Preservation of Food by Physical and Chemical Methods, Animal Nutrition and Quality of Animal Origin Food, and Hygiene and Technology of Meat.
Professor Vasilev's primary research interests focus on Food Hygiene, Meat Technology, Food Safety, Animal Origin Food Quality, Traditional Meat Products, and Food Microbiology. His work particularly emphasizes the scientific analysis of traditional Serbian meat products like Sremski kulen, examining their physicochemical, biochemical, and microbiological characteristics throughout production and ripening processes. His research also extends to food safety concerns including toxic element analysis, biogenic amine content, and pathogen control in various food products. He has co-authored significant textbooks including 'Hygiene and Technology of Meat' (2015) and 'Hygiene and Technology of Meat, Practical Guide' (2012).
Over the past five years, Professor Vasilev's publication record demonstrates a strong focus on meat science and food safety. His research examines traditional meat products, particularly Serbian dry-fermented sausages, investigating their quality parameters, safety aspects, and production methods. He has also conducted significant research on the effects of seasonal variations on meat quality, the nutritional profiles of alternative meat sources like rabbit, and the biochemical composition of marine food products such as mussels. His work often involves interdisciplinary approaches, combining food science, veterinary medicine, and analytical chemistry to address food safety and quality concerns.
Professor Vasilev has made substantial contributions to academic literature through numerous peer-reviewed publications in high-impact journals including Environmental Science and Pollution Research, Journal of Food Processing and Preservation, Animal Science Journal, and Meat Science. His collaborative research approach is evident in his extensive co-authorship network, primarily with colleagues from the University of Belgrade's Faculty of Veterinary Medicine. His work bridges theoretical knowledge with practical applications in food production, particularly supporting small and micro meat establishments in Serbia while maintaining food safety standards.
