Margalida Monserrat Mesquida

Dr. Margalida Monserrat Mesquida is a postdoctoral researcher at the University of the Balearic Islands (UIB) and a lecturer in Nutrition and Human Food. She holds a PhD in Nutrition and Food Sciences (Excellent Cum Laude) and is accredited as a Profesora Contratada Doctora by ANECA. Her work integrates community nutrition, oxidative stress, and metabolic health, with a focus on the Mediterranean diet.

Her research explores dietary impacts on oxidative stress, inflammation, and chronic diseases like metabolic syndrome and non-alcoholic fatty liver disease. She leads projects on sustainable diets, microplastics, and lifestyle interventions, often combining clinical and environmental perspectives. Her work has been published in 45 international journals and four book chapters, with 57 national/international conference presentations.

Recent articles highlight trends in Mediterranean diet efficacy, ultra-processed food risks, environmental sustainability of diets, and oxidative stress biomarkers in metabolic diseases. She has supervised 19 theses (12 Master’s, 7 Degree) and collaborates with institutions such as CIBEROBN, IUNICS, and the University of Évora, Portugal.
