Dr. Margalida Monserrat Mesquida serves as an Assistant Professor at the University of the Balearic Islands (UIB), where she teaches in the Department of Biology and Physiology. She concurrently holds a postdoctoral research position with the competitive 'CONCIÈNCIA IdISBa: Consolidating IdISBa science' fellowship at the Balearic Islands Health Research Institute (IdISBa), working within the Community Nutrition and Oxidative Stress research group (NUCOX). Her additional academic affiliations include being a researcher attached to the CIBER of Obesity and Nutrition Pathophysiology (CIBEROBN) of the Carlos III Health Institute, a member of the University Institute for Health Sciences Research (IUNICS), and a collaborating researcher at UIB.
Dr. Mesquida earned her Biochemistry degree from UIB followed by two master's programs: Teacher Training and Nutrition and Human Food, both from UIB. She completed her doctorate through the Nutrition and Food Sciences program of the Universities of Balearic Islands and Granada with an 'Excellent Cum Laude' distinction. Her doctoral research was funded by the competitive predoctoral 'Law of Science' scholarship from CIBER and has received multiple prestigious awards.
Her research program centers on community nutrition, oxidative stress mechanisms, Mediterranean diet applications, antioxidant properties, inflammatory processes, and prevention strategies for cardiovascular conditions including fatty liver disease and metabolic syndrome. With 45 publications in international indexed journals and four book chapters, her scholarly impact is reflected in her bibliometric indicators (as of March 2025): Scopus h-index of 13 with 674 citations and FWCI of 1.7741; Web of Science h-index of 13 with 571 citations. Her work demonstrates consistent contribution to nutritional science and preventive medicine.

As an educator, she teaches across multiple programs including the Master's Degree in Nutrition and Human Food at UIB, where she instructs courses on physiological foundations for elderly populations, lifestyle and health, and food allergies. She has also served as substitute faculty in Medicine, Biology, and Biochemistry programs at UIB, and in the Human Nutrition and Dietetics program at the Catholic University of Ávila. Her mentoring record includes supervision of 12 Master's Theses and 7 Bachelor's Theses. She has participated in 57 national and international conference presentations and collaborated on multiple competitively funded R&D projects from public and private sources.
Dr. Mesquida is an active member of the Nutrició Comunitària i Estrès Oxidatiu (NUCOX) research group, a consolidated R&D unit focused on community nutrition and oxidative stress. Her international research experience includes a postdoctoral stay at the University of Évora in Portugal.
