Dr. Julie Plasencia is an Associate Professor and registered dietitian at the University of Kentucky, affiliated with the Department of Dietetics and Human Nutrition in the College of Agriculture, Food and Environment. She directs the Didactic Program in Dietetics and holds a joint appointment at the College of Dentistry's Wellness, Diagnosis and Prevention Clinic. She is also affiliated with the Center for Equality and Social Justice and the Center for Health Engagement Transformation.

Dr. Plasencia conducts mixed methods research on nutrition-related health disparities, emphasizing cultural food practices of Hispanics/Latinos and youth health. Her work bridges public health, social justice, and community engagement.
She was recognized as a Clinical Scholars Fellow by the Robert Wood Johnson Foundation (2019–2022) and directs the Bridge Scholars Program, supporting student development through interdisciplinary initiatives.
As head of the Plasencia Lab: Culture & Diet Research, she collaborates across academia and healthcare to address complex health challenges. Her teaching includes courses like DHN 301 (Dietetics Practice), DHN 374 (Research and Writing in Dietetics), and DHN 598 (Global Foods, Diet and Culture).
