Abbigail Pace, PhD, RDN, LD serves as an Assistant Professor in the Department of Dietetics and Human Nutrition at the University of Kentucky's Martin-Gatton College of Agriculture, Food and Environment. She is a Registered Dietitian Nutritionist and licensed dietitian with expertise in campus-based food insecurity interventions, community-based participatory research, and SNAP policy.

Her research focuses on leveraging campus coalitions to combat college student food insecurity and improving access to nutrition resources through interdisciplinary collaboration. She has pioneered initiatives connecting SNAP eligibility with student wellness programs and has contributed to clinical nutrition practices through her work at Auburn University Health Promotion & Wellness Services.
