Kayla Parsons, PhD, RDN, serves as the Dietetic Internship Director and Lecturer in the Department of Human Nutrition at the School of Food and Agriculture, University of Maine. Her professional interests focus on college and young adult health, public policy advocacy, mindful eating, and nutrition programming. She teaches courses such as FSN 101 (Introduction to Food Science and Human Nutrition), FSN 270 (World Food and Culture), and FSN 412 (Medical Nutrition Therapy I).
Her research explores diet quality impacts on college student health, wellness interventions for nursing students, and curriculum development for mindful eating promotion. Parsons is actively involved in validating nutrition literacy tools for young adults and investigating interdisciplinary approaches to public health education.
She holds a PhD and is a Registered Dietitian Nutritionist (RDN), contributing to both academic and practical nutrition initiatives. Her work bridges clinical nutrition, education, and community health advocacy.
