Ellen Shanley is a Lecturer in the Department of Allied Health Sciences and Director of the Dietetics Program at the University of Connecticut. She holds an MBA and is a registered dietitian nutritionist (RDN) with Fellow status in the Academy of Nutrition and Dietetics (FAND). Her affiliation includes the College of Agriculture, Health, and Natural Resources.
Her research focuses on nutrition education outreach, food service systems management, and integrating technology into healthcare. She authored three books: Connecticut Cooks for Kids, Fueling the Teen Machine, and Overcoming Childhood Obesity. She currently serves on the Academy of Nutrition and Dietetics Board of Directors (2018–2021).
Notable awards include the Academy’s Medallion Award, the Academy of Nutrition and Dietetics Foundation’s Award for Excellence in Dietetic Education, and the Outstanding Dietetic Educator in Area 7 award. Her professional contributions span leadership roles in dietetics education and advocacy.
Ms. Shanley’s office is located in Koons Hall, Room 314. She is actively involved in advancing nutrition education and public health initiatives through her program leadership and scholarly work.
