Stanley Wilfong is a Senior Lecturer and Program Coordinator for the Nutrition Sciences Program in the Department of Human Sciences and Design at Baylor University, part of the Robbins College of Health and Human Sciences. He plays a key role in shaping the curriculum and academic direction of the nutrition program.
His educational background includes a BS in Nutrition and Dietetics (1991), a Dietetic Internship (1992), and an MS (1993), all from Texas Tech University. He is a Registered Dietitian Nutritionist (RDN), Licensed Dietitian, and holds the prestigious distinction of Fellow of the Academy of Nutrition and Dietetics (FAND).
Professor Wilfong specializes in Medical Nutrition Therapy, Nutrition Care Process, Clinical Dietetics, and Food Service Production. His expertise bridges academic instruction and real-world healthcare nutrition management, drawing from over 20 years of professional experience in clinical and administrative roles across nearly 200 healthcare facilities in 13 states.
His teaching portfolio includes foundational and advanced courses such as NUTR 2101 (Introduction to the Profession of Dietetics), NUTR 3388 (Introduction to Medical Nutrition Therapy), and NUTR 4388 (Medical Nutrition Therapy), as well as practicum and special studies courses that provide students with hands-on training.
