Bruce McAdams is an Associate Professor at the University of Guelph’s School of Hospitality, Food and Tourism Management, part of the Gordon S. Lang School of Business and Economics. He holds a B.Comm in Hotel & Food Administration (1989) and an M.A. in Leadership (2009), both from the University of Guelph. With over 20 years of hospitality industry experience, he previously served as Vice President of Operations at Oliver & Bonacini Restaurants. His research focuses on sustainability in foodservice, food waste reduction, and leadership practices. He founded and directs the University of Guelph Sustainable Restaurant Project (UGSRP), which fosters collaboration between academia and industry to address sustainability challenges.
McAdams has received numerous awards, including the Distinguished Professor Award (2018) and the United Nations PRME Excellence Award (2017). He teaches courses on foodservice management, leadership, and wine studies. His work has been featured in major media outlets like The Globe and Mail, CBC Radio, and NPR.
Key initiatives include Garden2Table (2010–2018), which educated children on food systems, and his ongoing leadership in the UGSRP’s annual symposia. His research spans topics such as tipping economics, mental health in restaurants, and sustainable practices in long-term care facilities.
