Amber Roy serves as a Clinical Professor and Nutrition Program Director in the Department of Health and Exercise Science at the University of St. Thomas' Morrison Family College of Health. As a Registered Dietitian Nutritionist (RDN), she actively contributes to the Academy of Nutrition and Dietetics (AND), Nutrition Educators of Health Professionals (NEHP), and Minnesota Academy of Nutrition and Dietetics (MAND).
Her educational background includes:
- Bachelor of Science in Dietetics (2014), Iowa State University
- Master of Science in Food Science and Technology (2016), Iowa State University
- Graduate Certificate in Learning Technology Leadership and Innovation, University of St. Thomas
Dr. Roy's research focuses on critical public health nutrition domains, particularly leafy-greens food safety, older adult nutrition and food safety, and culturally-tailored diabetes education. She applies Hazard Analysis and Critical Control Point (HACCP) and Food Safety Preventive Controls for Human Food (FSPCA) frameworks to develop evidence-based community health programs through extension-based education methodologies.
