Nouguez examines the institutionalization of health value through two complementary research areas: 1) market structuring of health products (medicines, food, drugs) and their regulatory frameworks, and 2) local public health policies involving multiple stakeholders. His work analyzes how biomedical, economic, and social valuations interact in institutional contexts.
Recent publications focus on pharmaceutical regulation, functional foods markets, and behavioral biases in health policy. His research tracks include collaborations with the French Medicines Agency (ANSM) and crisis management studies through the CrisOrg project.
