Rakesh Singh is a Professor in the Department of Food Science & Technology at the University of Georgia's College of Agricultural & Environmental Sciences. His research focuses on emerging food processing technologies for safety and quality enhancement.

Research Interests include value-added food processing using UV/H2O2 for aflatoxin decontamination, high-pressure processing, atmospheric cold plasma, and radio frequency heating for food safety. His work also explores physical, microbiological, and chemical characterization of food products during processing.
Academic Contributions include co-authoring the textbook Fundamentals of Food Engineering (4th edition, 2018) and teaching courses like FDST 3910/8910: Food Science Internship and FDST7020E: Integration of Multidisciplinary Topics in Foods.
