Nancy Munoz, DCN, MHA, RDN, FAND, serves as Assistant Professor in the Department of Nutrition at Rosalind Franklin University of Medicine and Science's College of Health Professions. Concurrently, she holds leadership roles as Supervisory Dietitian and Chief for Nutrition and Food Service at the Southern Nevada VA Healthcare System, overseeing clinical and administrative operations for 72,000 Veterans.
Her educational background includes:
- Doctorate in Clinical Nutrition from Rutgers University, School of Health-Related Professions
- Master of General Administration (concentration in Health Care) from the University of Maryland
Dr. Munoz's research centers on clinical nutrition protocols, wound healing, and pressure injury prevention in healthcare settings. Her work bridges academic scholarship with practical implementation across skilled nursing facilities and veteran care systems, emphasizing evidence-based dietary interventions for complex patient populations.
