Monica DE CAROLI is an Associate Professor at the University of Salento, Department of Biological and Environmental Sciences and Technologies, where she conducts research in Environmental and Applied Botany at the Ecotekne Center in Lecce.

The applied dimension of her research includes extraction of plant bioactive molecules using supercritical fluids and ultrastructural characterization of plant matrices through advanced microscopy techniques.
She teaches Environmental Botany courses at the University of Salento, with recent exam announcements for the 2022/2023 and 2023/2024 academic years indicating her active teaching role.
