Mary Ann Lila

Mary Ann Lila holds the David H. Murdock Distinguished Professorship at North Carolina State University’s Department of Food, Bioprocessing & Nutrition Sciences. She leads the Plants for Human Health Institute and is affiliated with the Global Institute for Bioexploration (GIBEX). Her research focuses on phytochemicals in functional foods, immune modulation, and plant-based solutions for health challenges like allergies and cognitive decline. Lila has pioneered protein-polyphenol particle technology to enhance bioactive delivery and mitigate food allergies.
