Colin D. Kay, Ph.D. serves as Professor of Developmental Nutrition in the Department of Pediatrics at the University of Arkansas for Medical Sciences. He holds dual directorship roles as Director of the Metabolomics and Analytical Chemistry Research Core at the Arkansas Children's Nutrition Center and Director of Precision Health Research at the Arkansas Children's Research Institute.
Dr. Kay's research focuses on Translational and Precision Nutrition and Health, with particular emphasis on how dietary phytochemicals from fruits, vegetables, and botanicals impact human health. His work centers on developing qualitative and quantitative metabolomic methodologies to understand how these dietary components contribute to the human metabolome. This research has led to the creation of MetaboFood®, a comprehensive food composition knowledge database containing chemical composition and metabolome data, along with metabolic and disease pathway associations for supporting precision nutrition initiatives.
Dr. Kay previously served as a David H. Murdock Distinguished Professor at North Carolina State University's Plants for Human Health Institute. Before that, he was an Associate Professor in the Department of Nutrition at Norwich Medical School, University of East Anglia, Norwich, UK. He earned his PhD in nutritional biochemistry from the University of Guelph, Canada, and completed postdoctoral training in human vascular interventions and controlled dietary feeding trials at Pennsylvania State University.
