Ruth MacDonald is a Professor in the Department of Food Science and Human Nutrition at Iowa State University, where she also serves as Associate Dean for Personnel and Finance. Her research focuses on the role of dietary factors in cancer prevention, particularly the effects of phytochemicals, soy, and zinc deficiency on colon and prostate cancer. She has also contributed to nutrition education initiatives, including innovative dietetic internship programs and community outreach models.
Her work spans molecular mechanisms of cancer development, dietary interventions to mitigate disease risk, and the application of botanical compounds in oncology. She has extensively studied the interplay between dietary phytochemicals and signaling pathways like hedgehog and estrogen receptors, as well as the impact of probiotics and processed foods on health outcomes.
Her publications highlight a strong focus on translational research, linking basic science discoveries to clinical applications and public health strategies. Notable areas include the modulation of inflammation pathways through diet, zinc deficiency effects on vascular health, and the development of service-learning programs to enhance cancer survivorship care.
