Kenneth Klingenberg Barfod serves as an Associate Professor in Microbiology and Fermentation at the Department of Food Science, University of Copenhagen (FOOD). His research centers on the complex relationship between humans and their microbial environment, with particular focus on the microbiome's role in health and disease development.
Dr. Barfod's educational background includes a Cand.scient. in Microbiology (2003) with thesis on "Cellulose degrading gut symbionts of Old House Borer, Hylotrupes bajulus" and a PhD granted in December 2010 on "Occupational exposure to Bacillus thuringiensis-based biopesticides - development of an aerosol hazard identification model in mice".
His primary research interests span gut health, microbiome dynamics, and the critical early life window where microbiota influences disease development. Recent work has expanded into understanding the gut microbiome's role in Anorexia Nervosa, reflecting his interdisciplinary approach that bridges microbiology, nutrition, and mental health.
