Jessie Hoffman is an Assistant Professor and Graduate Program Director in Human Nutrition at Winthrop University. She holds a PhD in Nutritional Sciences from the University of Kentucky and is a Registered Dietitian. Dr. Hoffman's research investigates nutrition-gut microbiome interactions, particularly dietary fiber impacts on gastrointestinal and metabolic health.
Research Focus: Examines relationships between nutrition, gut microbiome composition, and host health outcomes. Investigates dietary fiber and prebiotic effects on gastrointestinal function within contexts of stress and metabolic disorders. Research integrates molecular approaches to understand nutrient-microbiome-host interactions.
Professional Recognition: Named 2023 Recognized Young Dietitian of the Year by the South Carolina Academy of Nutrition and Dietetics for outstanding contributions to research, teaching, and community engagement.
Educational Contributions: Developed curriculum for online and in-person nutrition courses. Co-authored an open educational resource on drug-nutrient interactions. Teaches undergraduate and graduate courses in nutritional biochemistry and related topics.
