معرفی
Dr. Balazs Bajka is a Lecturer in Nutritional Sciences at King's College London, affiliated with the School of Life Course & Population Sciences and the Department of Nutritional Sciences. As a gut physiologist, his research focuses on how dietary components—particularly dietary fibers—affect nutrient absorption and metabolic homeostasis through interactions with intestinal mucus, bile, microbiome, and host physiology.
Research Interests
- Gut physiology and nutrient absorption
- Dietary fiber-microbiome-host interactions
- Mechanisms of lipid and starch digestion
- Preventive strategies for obesity and diabetes
- Sustainable and functional food systems
Key Publications
Recent work includes studies on food waste reduction through root-to-tip dining, Pickering emulsions for controlled lipid digestion, iron bioavailability in processed grains, and satiety-promoting effects of chickpea-enriched bread. His research employs biophysical methods, in vitro digestion models, and clinical trials to explore molecular mechanisms in the small intestine.
