Jane White is an Assistant Professor in Brewing and Distilling at Heriot-Watt University's School of Engineering & Physical Sciences and the Institute of Biological Chemistry, Biophysics and Bioengineering. She specializes in biomass processing, fermentation, and valorization of brewing/distilling by-products. Her research focuses on sustainable technologies, including biobutanol production from spent grains, protein extraction for salmon feed from pot ale, and reducing CO2 emissions in distilling. She actively contributes to the KTN/IBioIC Bioeconomy Cluster and reviews grants for IBioIC.
Her work addresses UN Sustainable Development Goals related to sustainable production and consumption (SDG 12), climate action (SDG 13), and life below water (SDG 14). Key research areas include yeast physiology, quorum sensing mechanisms, and microbial morphogenesis in brewing strains. She has patented processes for biofuel and aquafeed production, demonstrating industry-academia collaboration.
Recent publications highlight her work on yeast filamentation, sustainable distillation practices, and quantitative image analysis tools for microbial colonies. She is accepting PhD students and has collaborated on projects like the Horizon Proteins initiative, converting whisky by-products into fish feed, with economic and environmental impacts.
