Eun Kyong Choi is the Interim Chair and Associate Professor of Nutrition and Hospitality Management at the University of Mississippi. She holds a Ph.D. in Hospitality Administration from Texas Tech University and an M.S. in Hospitality Management from Florida International University. She is a Certified Hospitality Educator (CHE) and holds the Certification in Hospitality Industry Analytics (CHIA). Her research focuses on consumer behavior, marketing, and hospitality technology adoption, with notable work on facial recognition in restaurants, food delivery robots, and labor shortage strategies.
Dr. Choi has been recognized with the ICHRIE Research Reports Competition (2023, 2024), Johnson & Wales Case Study Competition (2017, 2019), and the 2023 Best Paper award for her work on robot chef adoption. She currently serves as Director of Education for the SECSA Federation of ICHRIE.
