Dr. Elizabeth Cook is a Research Associate at Edith Cowan University's School of Medical and Health Sciences, affiliated with the Food Environments Team and Nutrition & Health Innovation Research Institute. She also serves as Co-Chair of ECU’s Staff with Disability Network and Journal Manager for the Journal of Teaching and Learning for Graduate Employability. Her career spans roles across Australian universities, including teaching, research design, and strategy.
She holds a PhD in Higher Education (2024, UK), a Master of Teaching (2014), and a Bachelor of Science (2006), both from the University of Melbourne.
Her research focuses on public health, nutrition, higher education evaluation, work-integrated learning (WIL), and employability frameworks. Her recent articles address gamification in education, relational employability in micro-placements, and ICT impacts on knowledge sharing. She contributes to national boards like the Australian Centre for Student Equity in Higher Education and the Australian Collaborative Education Network.
Her work emphasizes practical tools for universities, such as evaluation frameworks and WIL toolkits. She collaborates with institutions globally, including Lancaster University’s research centers. Elizabeth’s research bridges academic theory and real-world impact, particularly in fostering global citizenship and workforce readiness.
