Carol Power is a Lecturer in Food Business and Development at University College Cork, with a dual role as Senior Researcher at the Centre for Co-operative Studies. She holds a PhD in Geography (2006) from UCC, a BA (1st Class Honours) in Geography and Policy Studies (1999), and postgraduate qualifications in teaching and learning (2013, 2020).

Her research examines co-operatives and social economy models in domains like the care sector, agricultural sustainability, and community development. Current work focuses on relationship-centered care systems and economic democracy through the Horizon Europe-funded DICES project (2025-2029).
Recent publications analyze Germany's 160-year housing co-operative evolution, platform economy cooperative alternatives, and Irish care co-operatives for aging populations. Her work synthesizes organizational theory, sustainable development, and policy reform.
Scientific Awards include three IRC/Research Ireland New Foundations grants for civic society projects: MENSPACE (2022), CO-AGE (2024), and ASPIRE (2025). These produced policy reports on SDG implementation by men’s sheds, home care co-operatives, and aging-in-place strategies.
Carol teaches modules on local development, sustainability strategy, and environmental economics across multiple programs, including the MSc in Sustainable Development and BComm. She applies pedagogical innovations in inclusive assessment and universal design principles.
