Amy Jennings is a Researcher at the University of East Anglia's Norwich Medical School, Department of Nutrition, with expertise in nutritional epidemiology and public health. She has been working at UEA since 2009, initially as a Research Associate in Nutritional Epidemiology and Biostatistics before advancing to her current position as Research Associate in Diet, Nutrition and Public Health.

Dr. Jennings holds a BSc in Food Science and Nutrition from the University of Wales, Cardiff (1998-2001) and a PhD in Human Nutrition from London South Bank University (2005).
Her research focuses on the effects of flavonoids and Mediterranean diets on aging and cardiometabolic health, examining how microbial and metabolite profiles mediate these relationships. She has led two large randomized controlled trials on Mediterranean Diet effects on cognition and biomarkers of aging, and analyzes data from major epidemiological studies including TwinsUK, EPIC-Norfolk, and PopGen.
Analysis of her recent publications reveals strong emphasis on nutritional interventions for cognitive health, with particular focus on Mediterranean diet adherence, sedentary behavior impacts, and dietary patterns in aging populations. Her work frequently employs twin registry data and epidemiological approaches to understand diet-cognition relationships.
Dr. Jennings has contributed to significant research projects including a WHO-funded project on nutrient requirements for children (2021-2022), a Rank Prize Funds project on behavioral change platforms (2020), and a long-term PCT-funded project on diet and public health training (2008-2018).
