Simon Chan is an Honorary Clinical Associate Professor at the University of East Anglia’s Norwich Medical School. His research focuses on gastrointestinal health, particularly the role of diet and lifestyle in inflammatory bowel disease (IBD) and gastrointestinal malignancies. He leads projects funded by the National Institute for Health and Care Research and NHS Norfolk & Waveney Integrated Care Board.
Key research areas include dietary patterns, food processing impacts, and nutritional epidemiology related to gastrointestinal disorders. He has collaborated internationally on cohort studies examining plant-based diets, nutrient profiling systems, and processed food consumption effects. Current projects include the PREDICT-GI-IRON study assessing iron deficiency in gastrointestinal malignancy prediction and PRED-IBD-CAL evaluating faecal calprotectin levels in IBD risk assessment.
