Amanda S. Holliday, an Associate Professor at the University of North Carolina at Chapel Hill's Gillings School of Global Public Health, serves in the Department of Nutrition as both an educator and administrator. She is the Director of the Practice, Advancement, and Continuing Education (PACE) Division and Program Director of the Coordinated Master's Program in Public Health Nutrition.

Her research and teaching focus on aging nutrition, clinical and management components of dietetics education, and innovative pedagogical methods. She pioneered the first national implementation of the 'Future Education Model' for dietitian training and organizes the Dementia Tour to enhance student empathy toward older adults.
Awards include the Outstanding Dietetics Educator Award (2019), three Innovation in Teaching Awards (2011-2014), and involvement in the North Carolina Board of Dietetics/Nutrition, where she chairs the board since 2022.
Holliday teaches Medical Nutrition Therapy, Nutrition Counseling, and Elderly Nutrition courses. She mentors students in hospital and long-term care experiences and collaborates with organizations like the Academy of Nutrition and Dietetics and the North Carolina Dietetics Association.
