Elizabeth Weikle is an Adjunct Professor in the Department of Human Nutrition at Winthrop University, teaching part-time. She holds both a B.S. and M.S. in Food and Nutrition from Winthrop University. A Licensed Registered Dietitian in South Carolina, she has extensive clinical experience, including 13 years as Assistant Director of Patient Services and Chief Clinical Dietitian at Piedmont Medical Center. Currently, she operates a private practice, Nutrition Network, serving the Rock Hill and Fort Mill areas. She actively participates in professional organizations, including leadership roles such as President of the South Carolina Dietetic Association (1995–1996, 1998–1999).
Her expertise spans clinical dietetics and nutrition education. Notable awards include multiple recognitions from state and local dietetic associations, highlighting her contributions to the field. She remains engaged in academic advising through her role on the Department's Academic Advisory Board.
