Judy Lester

Judy Lester, MS, RDN, CSG, LDN, is an Adjunct Faculty member at the UNC Gillings School of Global Public Health, teaching NUTR 760: Food Science and Culinary Arts. She serves as an outpatient clinical dietitian at UNC Health Care in Chapel Hill, focusing on high-risk pregnancies, nephrology, and pre-/post-renal transplant nutrition. Her professional experience includes roles at Chatham Hospital, WakeBrook, and UNC Hospitals Hillsborough Campus.

Education: B.S. in Nutrition and Foods from Auburn University; M.S. in Nutrition from Meredith College; Dietetic Internship at University of Alabama at Birmingham. Research interests include ANCA vasculitis and nutritional influences, with a pilot study in progress. Active in professional organizations: Durham Chapel Hill Dietetic Association, North Carolina Academy of Nutrition and Dietetics, and the Academy of Nutrition and Dietetics.

Teaching and community engagement highlight her commitment to culturally diverse patient care and public health education. She also contributes to global health initiatives through the Gillings School's interdisciplinary environment.
