Alain Le Bail serves as a Lecturer and Researcher at Oniris Nantes, where he has maintained continuous academic engagement since 1992 following the merger of ENITIAA into the current institution. As a founding member of the GEPEA research unit (UMR 6144), he contributes to the MAPS2 team with expertise spanning refrigeration systems and food thermomechanics.
His academic foundation includes:
- PhD in Fluid Mechanics and Heat Transfer from École Centrale/University of Nantes (1990)
- Initial industrial R&D experience at Saunier Duval (1990-1992)
Professor Le Bail's research examines thermal processing phenomena in food matrices, particularly state changes during freezing/thawing and their mechanical implications. His work applies fundamental heat transfer principles to solve agri-food industry challenges, with strong emphasis on practical applications in food preservation engineering. The thermomechanical behavior of food under thermal stress represents his most distinctive research niche.
Within GEPEA's structure, he operates through the refrigeration and thermal processes division, contributing to institutional projects that bridge academic research with industrial food processing applications. His laboratory activities focus on experimental analysis of food material responses to thermal treatments, directly supporting Oniris' engineering curriculum in food technology.
