Prof. Dr. Zorica Knežević-Jugović is Full Professor of Biochemical Engineering and Biotechnology at the University of Belgrade – Faculty of Technology and Metallurgy (TMF) , elected to the rank on 22 January 2014. She teaches courses in enzymology, enzyme engineering, carbohydrate technology, electrochemical biosensors and immobilised biocatalysts across basic, master and doctoral programmes. Education & Training Doctoral and post-doctoral research in biochemical engineering and biotechnology (details not fully disclosed in text). Research Interests Her research integrates enzyme engineering, immobilisation science and bioprocess design to develop sustainable technologies for food, pharmaceutical and environmental applications. Key themes include: Design of smart hydrogels (PNIPAM-co-itaconic acid) for controlled enzyme release. Ultrasound- and microwave-assisted extraction and modification of plant proteins. Microbial enzyme production on agricultural waste via solid-state fermentation. Encapsulation of bioactives (polyphenols, vitamins, essential oils) in chitosan/alginate carriers. Electrochemical biosensors and biofuel cells for wastewater treatment. Publication Profile Since 2008 she has authored >40 SCI-indexed papers, focusing on biopolymer-based enzyme immobilisation, functional food proteins, and sustainable bioprocesses . Recent works advance delivery systems for polyphenols and essential oils, and valorisation of soybean and pumpkin leaf proteins. Supervision & Mentoring She has supervised 11 completed PhD theses (2014-2024) and numerous master and undergraduate projects, covering topics from gluten detoxification to magnetic biocatalyst design. Labs & Teams She heads research activities within the Department of Biochemical Engineering and Biotechnology at TMF , coordinating projects funded by national and international programmes.
