Dr. Xue Zhang is an Assistant Professor in the Department of Animal and Dairy Sciences at Mississippi State University (MSU), affiliated with the College of Agriculture and Life Sciences and the Mississippi Agricultural and Forestry Experiment Station. Her research focuses on poultry science, meat quality defects, food microbiology, and pest management in food products. She holds a Ph.D. in Food Science, Nutrition, and Health Promotion from MSU, as well as multiple degrees in Food Science from Northeast Agricultural University.
Education includes a B.S. and M.S. in Food Science from Northeast Agricultural University, followed by an M.S. in Statistics and Ph.D. in Food Science at MSU. Her work addresses challenges like woody breast myopathy in broilers, microbial pathogen control, and innovative pest management strategies for dry-cured meats. She has developed solutions using OMICs technologies, edible films, and food-grade coatings to combat Tyrophagus mites and improve meat quality.
Research interests span proteomics, microbiome interactions in livestock, and food safety. Over 40 peer-reviewed articles highlight her contributions to poultry health, meat science, and food processing innovations. She advises graduate students and collaborates with industry on practical applications of her research.
