Susanne Talcott is an Associate Professor in the Department of Food Science & Technology at Texas A&M University, part of the College of Agriculture & Life Sciences. She holds a B.S./M.S. in Nutrition from the University of Bonn, Germany, and a Ph.D. in Food Science and Nutrition from the University of Florida, followed by postdoctoral training in Pharmaceutics at the same institution. Her research focuses on the translational pharmacokinetics and pharmacodynamics of botanical compounds, particularly targeting inflammation, cancer prevention, and intestinal health through human clinical trials. Her work emphasizes the safety, efficacy, and dosing of non-nutrient bioactives in functional foods and dietary supplements.
Key areas of expertise include the molecular mechanisms of anti-inflammatory effects of plant compounds, such as anthocyanins from cherries and mango polyphenols, and their roles in suppressing cancer metastasis and improving metabolic health. Her lab collaborates with interdisciplinary teams to bridge bench-to-bedside research, aiming to provide evidence-based guidelines for public health and industry.
Recent studies highlight the anti-inflammatory and anticancer properties of dark sweet cherry extracts, cranberry proanthocyanidins, and mango bioactives, with implications for obesity, cardiovascular disease, and colorectal cancer. Her work also explores gut microbiota interactions and probiotic synergies in modulating metabolic and immune functions.
Dr. Talcott is affiliated with Texas A&M AgriLife Research, contributing to translational studies that integrate food science, pharmacology, and clinical nutrition. Her research bridges gaps in understanding how dietary interventions can mitigate chronic disease risks through molecular and physiological mechanisms.
