Dr. Stephen Talcott is a Professor in the Department of Food Science and Technology at Texas A&M University's College of Agriculture & Life Sciences. His research focuses on phytochemicals in foods, particularly the antioxidant properties, health benefits, and stability of bioactive compounds during processing. Current investigations include phytochemical characterization in tropical fruits (açai, mango, guava), nuts (peanuts), and berries, with emphasis on how processing affects bioactive retention and health functionality.
His publication trends reveal three primary research streams: 1) Clinical interventions examining fruit-derived polyphenols on obesity, inflammation and cognition, 2) Mechanistic studies of phytochemical metabolism and bioavailability, and 3) Processing methods to preserve bioactive compounds. Recent work (2022-2025) demonstrates particular focus on dark sweet cherries and mangoes, examining impacts on gut microbiota, metabolic health, cognitive function, and cancer mechanisms. Student Elizabeth Culpepper researches hydrolysable tannin metabolism under his supervision.
