Staci McIntosh is an Adjunct Assistant Professor at the University of Utah’s Department of Nutrition and Integrative Physiology, College of Health. She has been on the faculty since 2000, initially as an Instructor and later promoted to Assistant Professor (Lecturer) until transitioning to her current role. She holds a Master’s degree in Foods and Nutrition from the University of Georgia (2000) and is a Certified Online Instructor (COI) from the Learning Resources Network (2004). Her expertise spans clinical nutrition, public health, and innovative online education. She is a renowned author of Williams' Basic Nutrition and Diet Therapy (editions 12–16) and has contributed to Elsevier’s Nutrition Concepts Online Courses.
Her research interests focus on advancing nutrition education accessibility, integrating technology in teaching, and improving clinical nutrition practices. She has pioneered online learning methodologies and remains active in professional development through conferences like the Teaching Professor Conferences.
Staci has received multiple accolades, including the Distinguished Teaching Award (2019), Recognized Young Dietitian of the Year (2008), and the Award of Merit (2006). She is a Fellow of the Academy of Health Science Educators (2020). Beyond academia, she volunteers in community health initiatives, such as the Free Health Clinic in Cat Cay, Bahamas (2008).
