Spyros Apostolos is an Associate Professor at the Department of Chemistry, University of Crete. His research focuses on the application of NMR spectroscopy in analytical chemistry, with emphasis on food analysis, cultural heritage materials, metabolomics, and natural products. He holds a Ph.D. in Chemistry from the University of Crete (1994) and has previously worked as a postdoctoral researcher at McGill University (1994-1995) and the University of Ulm (1996-1997).
