Dr. Seok Shin Tan is a Senior Lecturer at the Jeffrey Cheah School of Medicine and Health Sciences, Monash University Malaysia. She specializes in public health nutrition, nutritional sciences, and functional foods, with a strong focus on maternal and child health, community nutrition, and nutrigenomics. She is actively involved in research and is accepting PhD students.

Her research interests span public health nutrition, including maternal and child health, community nutrition, health promotion, food safety, and nutritional sciences such as functional foods and food composition analysis. She also explores nutrigenomics and nutrigenetics, emphasizing the genetic basis of dietary responses. Her work contributes to UN Sustainable Development Goals related to health and well-being.
Dr. Tan's recent publications (2020–2025) reflect a strong focus on food security, eating behavior, dietary interventions, and the impact of nutrition on public health. Her work includes clinical trials on probiotics and postbiotics, dietary assessment platforms, and studies on the effects of fortified foods on cognitive and metabolic health. She is involved in several research teams and collaborative networks focused on public health nutrition, digital dietary tools, and women’s health innovation. Her lab and project teams include interdisciplinary researchers from Monash and international institutions, working on clinical trials, nutritional interventions, and public health monitoring systems.
